Workshop with Chef Patrick Gauthron formerly of Aux Petits Delices on Pate à Choux making. Using them as a base for creating savory gougères (cheese puffs for appetizers), sweet croquettes with crystallized sugar, whipped cream filled swans, the classic St. Honore and to finish the dramatic towering Croquembouche served with French bubbly.
