Basic Cooking and Baking Techniques:

WEEK 1: Food Prep 101– Learn the proper techniques for preparing food for consumption from holding a knife to a peeler. Then progress to chopping, slicing, and dicing ingredients into various shapes and sizes. This knowledge will make cooking a breeze!

WEEK 2: Cooking Techniques– Once you have mastered the basic knife skills this will lead to the foundations of cooking. Learn about the various cooking methods: poaching, boiling, steaming, braising, sauteing, and broiling. Prepare simple and tasty vegetables, meat and fish with those techniques.

WEEK 3: Baking Techniques– Baking requires following recipes and more precise culinary techniques.You will learn how to prepare some simple baked goods e.g. muffins and custard that are fun and delicious.

WEEK 4: One Pot Meals– With all these great cooking techniques under your belt, you will have the knowledge to prepare wholesome and easy dishes. Just imagine being able to whip up the perfect turkey chili and delicious vegetarian lasagna in a snap with nutritious ingredients.Hints on how to pick out foods from the market will also be discussed.

WEEK 5: Quick & Easy Healthy Snacks– Out with the junky, calorie-laden food and in with healthy snacks that can be prepared in a few steps.Once you’ve tasted home-made granola, fruit smoothies, and non-sugary sweets it will inspire you to eat delicious and nutritious foods.

Learn light make-ahead dishes that are not the same old chicken salad, but that can be prepared a day in advance. Dishes such as Smoky Corn Chowder, Thai Beef Salad with Peanut Dressing, Scallops with Orange and Herbs and Rustic Apple Tatin all can be prepared the day before and finished quickly before serving. Learn how to make a delicious luncheon and remain relaxed.

This class will give you tips and recipes for make ahead elegant dinner parties. Triple Bruschetta, Lasagna Blanco, Fennel and Orange Salad, Fish in Parchment with Artichokes and Olives and Chocolate Hazelnut Cheesecake will show you how you can produce restaurant style dinners without the restaurant staff.
